94 Pâtisserie Udaipur: Chef Nikshay's Inspiring Journey

August 21, 2026

The Story Behind 94 Pâtisserie: How Chef Nikshay Brought French Baking to Udaipur

Quick Facts

  • Founder: Chef Nikshay

  • Established: 2018

  • Specialty: 100% Vegetarian French Bakery

  • Famous For: German Pastry, Chocolate Cakes, Petit Gâteaux & Aloo Puff Pastries

Every Bakery Has a Story...

When people visit 94 Pâtisserie, they usually remember the beautiful cakes, buttery pastries, and elegant desserts. But behind every dessert is a story of years of learning, sacrifices, and one dream that travelled all the way from London to Udaipur.

During our conversation with Chef Nikshay, we discovered that 94 Pâtisserie wasn't started simply to sell cakes. It was created to introduce authentic French-style baking to Udaipur without compromising on quality or affordability.

A Passion That Started Early

Unlike many people who discover their passion later in life, Chef Nikshay always knew that he wanted to become a chef.

His parents noticed his interest in cooking and encouraged him to follow his dream instead of choosing a conventional career.

To master the art of baking, he moved to London and studied French Culinary Arts, where he received professional training and learned the techniques behind authentic European pastries.

While studying there, he also worked in several luxury five-star hotels, gaining hands-on experience in professional kitchens.

I always knew one thing—I wanted to cook. — Chef Nikshay

One Question Changed His Life

Sometimes success begins with a simple conversation.

While travelling to Radisson Hotel with a family friend, he was asked,

What do you really want to do in your life?

Without thinking twice, his answer was,

I want to cook. I want to become a chef.

That single moment strengthened his decision to pursue cooking as a career.

Why He Returned to Udaipur

After gaining valuable experience in different hotel groups, many chefs would have continued working in metro cities or abroad.

Chef Nikshay chose a different path.

He returned to Udaipur because he loved the city's peaceful lifestyle and felt there was space for something new.

In 2018, premium French-style bakeries were still rare in Udaipur.

Instead of competing with traditional bakeries, he decided to introduce handcrafted European pastries made with premium ingredients.

Why the Name 94 Pâtisserie ?

Many customers wonder about the unique name.

The answer is simple.

The number 94 represents Chef Nikshay's birth year, making the bakery deeply personal while giving it a modern identity.

The Biggest Challenge Nobody Sees

Most people think baking is only about cakes. Chef Nikshay smiles when he hears that. Running a bakery means understanding machinery, packaging, staff management, costing, inventory, customer service and production planning—all at the same time.

To prepare himself, he even spent nearly two months working in his relative's sweets factory. That experience taught him how to manage production on a larger scale.

French Baking Without Eggs? The Real Test

Perhaps the toughest challenge was creating authentic French pastries while keeping the bakery completely vegetarian.

Traditional French desserts often rely on ingredients that vegetarian bakeries cannot use. That meant recreating textures, flavours and presentations through constant experimentation. It required patience, creativity and hundreds of trials.

Today, that challenge has become one of the bakery's biggest strengths.

Then Came COVID-19

Just as 94 Pâtisserie was beginning to make its mark in Udaipur, the COVID-19 pandemic brought everything to a pause. Like many small businesses, the bakery had to close during the lockdown, making it one of the toughest chapters in its journey.

After restrictions were lifted, the team slowly reopened with the same commitment to quality, freshness, and authentic French baking. Loyal customers returned, new visitors discovered the bakery, and 94 Pâtisserie gradually found its rhythm again. Today, it continues to be one of Udaipur's most loved vegetarian French bakeries, proving that passion and perseverance can overcome even the biggest challenges.

Signature Desserts You Should Try

If you're visiting 94 Pâtisserie for the first time, Chef Nikshay recommends trying:

✅ German Pastry (created during his London days)

✅ Rich Chocolate Cakes

✅ Petit Gâteaux Dessert

✅ Fresh Aloo Puff Pastry

These items have become the bakery's signature because they combine authentic techniques with flavours loved by people in Udaipur.

A Wedding Cake That Made the Moment Special

94 Pâtisserie’s expertise extends beyond everyday desserts and celebration cakes. The bakery has also created elegant wedding cakes for special occasions.

One memorable example is the wedding cake made for Abhishek Soni’s wedding, which was prepared by 94 Pâtisserie. The beautifully designed multi-tier cake, decorated in soft white and blue tones, became a part of the couple’s special celebration.

It is a glimpse of how Chef Nikshay and his team bring their pastry skills, attention to detail and creative presentation to important occasions—not just regular bakery orders.

More Than Just Desserts

For Chef Nikshay, success isn't measured only by sales. It is about seeing customers celebrate birthdays, anniversaries and special moments with cakes made in his kitchen. Every dessert carries years of learning, passion and dedication. That is what makes 94 Pâtisserie more than just another bakery.

Lake City Blog's Take

After hearing Chef Nikshay's journey, one thing becomes clear—94 Pâtisserie wasn't built overnight. It is the result of years of education, international experience, family support, countless experiments, and the courage to bring something different to Udaipur. If you appreciate handcrafted desserts made with passion and quality, this bakery deserves a place on your Udaipur food bucket list.

The cool breeze, colourful sky, and peaceful water create an atmosphere that's hard to forget. Whether you're visiting Udaipur for the first time or returning once again, an evening at Fateh Sagar Lake is an experience you shouldn't miss.

 Enjoy a Boat Ride

Boating is the biggest attraction at Fateh Sagar Lake. Visitors can choose from regular boats, motorboats, and speed boats (subject to availability). The ride offers stunning views of the lake, surrounding hills, and Nehru Garden located in the middle of the lake.

The best time for boating is during sunset when the golden light reflects beautifully on the water.

 Walk Along the Famous Pal

The Fateh Sagar Pal is where Udaipur truly comes alive in the evening. The wide lakeside promenade is perfect for a peaceful walk while enjoying fresh air and beautiful views.

It offers a short but interesting experience and adds something different to your evening walk around the lake.

Camel & Horse Rides

Camel and horse rides are available along the lakeside during the evening. These short rides are especially popular with children and visitors looking to enjoy the lakefront in a different way.
